Vue Rooftop & Bar in Dillon aims to open in mid-December

When Homewood Suites by Hilton in Dillon is completed in mid-December, it will offer guests a 24-hour fitness center, business center and convenience store, as well as on-site laundry facilities, an outdoor swimming pool. heated salt water and outdoor hot tub, and grocery store service. But perhaps one of the hotel’s most anticipated features is The Vue Rooftop & Bar on the fourth floor.

Like the hotel, the restaurant managers are aiming for an opening in mid-December. Its menu will include small bites, soups and salads, sandwiches and burgers, entrees and desserts. On the menu, sweet potato croquettes, mushroom bisque, bison meatloaf, salmon fillets, bison burgers and s’mores pie.

However, it’s not just the menu that will attract customers. In addition to offering classic cocktails, the bar will offer specialty cocktails such as an old-fashioned spicy pumpkin, cranberry lemonade, Russian white eggnog, and a ginger margarita.



While the team is still finalizing their menu prices, classic cocktails should be between $ 10 and $ 11 and some of the specialty cocktails will hover around $ 14. Entrees range from $ 8 to $ 15, entrees range from $ 20 to around $ 40, and premium steaks will cost around $ 60.

When developing the menu, Food and Beverage Director and Executive Chef Brian Friedman said he was looking for an upscale vibe that was still accessible to most locals.



“When I built it, my real goal was to kind of build a place that really lines the line between this laid back upscale resort restaurant and a really good local restaurant,” Friedman said. “So I wanted to stay focused on where we are at, so I wanted to make this contemporary mountain food, but bring in some really fun twists or influences from around the world, whether it’s a gradient or a slightly different way of doing or presenting. Something.”

While the menu is interesting, the hotel’s Assistant General Manager and Sales Manager Vivan Shaw said she believes it will be the atmosphere of the restaurant that initially draws customers in and the menu and service will be. the hook that will keep them coming back for more.

“When you get there, it’s literally the best view in Summit County,” Shaw said. “I’ve lived here since 1987, and unless you’re mountain biking or hiking… or maybe chairlift, you won’t get a better view from a place that’s a real facility here in the county. It’s incredible.”

The restaurant’s main dining area has enough seating for around 60 people, and another 45 people can sit outside when the weather warms up, and the patio offers standing space for those who just want to grab a bite to eat. glass. The Vue also has a banquet area for private parties that can comfortably accommodate around 70 people.

To keep the high-end atmosphere alive and upbeat, Friedman said his team are planning to host a few recurring events. One of them is a community benefit evening held on the first Tuesday of the month. According to the restaurant website, organizations like the Family & Intercultural Resource Center, Breckenridge Outdoor Education Center, Summit County Rescue Group, Keystone Science School, Summit Habitat for Humanity and Breckenridge Backstage Theater are already registered from January to June.

Friedman said The Vue is also planning to host Taste and Toast associations where the restaurant is working with local drink organizations to host a special meal. These twinning dinners will take place on the second Wednesday of the month, and while walk-in tours are accepted, reservations are strongly encouraged. Starting in January, the first organizations to participate in these twinning dinners are Steep Brewing Co., Outer Range Brewing Co., Continental Divide Winery, South Park Brewing, Vail Brewing Co., and Carboy Winery.

But that’s not all. The restaurant offers daily specials, some of which include live music and 15% off for locals on Tuesdays and 15% off select beer selections and 20% off select bottles on Thursdays.
